6 c. sliced apples (6 apples)
1/2 to 2/3 c. sugar
cinnamon or nutmeg, 1 t.
2 T. flour
1/2 c. butter
1/2 c. brown sugar
1 c. flour
Line a 9-inch pie pan with pastry. Then chill while preparing apples.
Mix together the sliced apples, sugar, cinnamon and 2 T. flour. Place in chilled pastry-lined pan. (If apples are not very juicy, sprinkle a bit of water).
Cream together the butter and brown sugar. Then with a pastry blender or fork, work in the 1 c. flour to make a crumb mixture. Sprinkle the crumb mixture over the apples.
Bake 15 minutes in a hot oven. Then reduce temperature to a moderate oven and bake 20 to 30 minutes longer. (If pie browns too quickly, cover with a piece of paper during lat few minutes of baking.) Cool slightly before serving.
Serve with plain or whipped cream if desired.
