Chicken Ala 10 Casserole (Hawaiian Haystacks)

COOK chicken and de-bone. Make gravy from broth.
LAYER:  Seasoned steamed rice
                Chicken pieces
                LaChoy noodles
                Chopped onions
                Chopped celery
                Chopped tomato
                Grated cheese
                Crushed pineapple
                Coconut

POUR gravy on top.  It's delicious!

Allen's Favorite Homemade Ice Cream

(Called the Six Three's)

Juice of 2 lemons
             3 oranges

Freeze till slushy.

Beat together:  3 eggs
                        3 c. sugar
for 20 minutes. (A secret to smooth homemade ice cream)

Put in freezer:  3 c. milk
                        3 c. cream**
                        3 mashed bananas
                        slushy lemon-orange juice
                        sugar-egg mixture

And churn away.  When ready, call Allen. : )  He eats ice cream all the time, even though he doesn't like it!  At least that is what he tells the grandkids.

**Whipping the cream slightly before adding to rest of ingredients hastens mixing time.

Baked Chicken

12 half chicken breasts (skinned and boned)
2 c. sour cream
1 T. Worcestershire Sauce
2 t. Tabasco
1/8 t. garlic powder (or 1 clove)
2 t. salt
1 1/4 t. paprika
bread crumbs

Mix sour cream and seasonings and pour over chicken. Turn each piece so it becomes well-coated. Cover well and refrigerate overnight. In the morning drop chicken one piece at a time in a shallow dish of bread crumbs, shaking more on top. When all are dipped, cover pan well and return to refrigerator to chill for at least 1 1/2 hours. Then uncover and bake in 325° oven for 1 hr. 15 min. (more or less)

50% Whole Wheat Bread

5 c. liquid (2 c. potato water
                 (2 c. buttermilk
                 ( 1 c. warm water
Put in mixer with 6 T. solid shortening
                             6 T. sugar/honey
                             2 T. molasses
                             2 T. salt
Add 7 cups wheat flour in and mix well. Add 2 T. yeast dissolved in 1/2 c. warm water. Add 6 cups white flour. Mix 10 minutes, then let rest in covered bowl 10 minutes. Divide into 5 loaves. Let rise 1 hour. Bake at 400-450° for 10 minutes, then 350° for 20-30 minutes.

SUGAR COOKIES

Grandma Norma Vance’s Favorite Roll out cookies
The only recipe she used.
1 Cup Butter
1 Cup Crisco
1 Cup Sugar
1 Cup Pd Sugar
2 eggs-beaten
2-3 tsp Vanilla
4 1/2 Cups Flour
1 tsp Salt
1 tsp Baking Soda
1 tsp Cream of Tarter

Cream Butter and Crisco, add both sugars, cream till fluffy. Add the eggs. Mix all till soft and fluffy. Add the other ingredients. Roll out and cut into shapes. Bake at 350o Cook till Lt Golden.

This recipe Norma read to me and said she always wanted to try it, but never did. If you make it, let us all know what tasters think….
Wonderful Sugar Cookies ( from Wife of Seminary teacher)

2 Cups Sour Cream
1 Cup Crisco
3 Cups Sugar
1/2 Cup Buttermilk
3 eggs
1 tsp B Powder
1 tsp Nutmeg
1 Tsp Soda
Dash Salt
8 Cups Flour

Combine all but flour with mixer. Add the flour. Roll ¼” thick. 350o 10 minutes. Let cool, Frost

Hot Tomato Drink

1/4 cup butter
1/4 cup chopped onions
36 oz tomato juice
2 1/2 to 3 cubes bouillon in 2 cups water
2 bay leaves

Parmesan cheese
Finely chopped celery

Heat first five ingredients to boiling and simmer for 5 minutes. Remove bay leaves and strain. Sprinkle with parmesan cheese and chopped celery. Will keep several days in fridge, if there's any to keep.

Yummy Frozen Chocolate Balls

1 lb milk chocolate chips, dipping chocolate, or Hershey bar
1 8-oz Cool Whip package
1/2 lb vanilla wafer crumbs or sugar cookies, finely crumbled
1/2 cup nuts, finely chopped

Allow Cool Whip to come to room temperature for about 1/2 hour. Meanwhile, melt chocolate over hot but not boiling water. Cool chocolate slightly and combine with Cool Whip. Combine cookie crumbs and nuts in shallow dish. Drop chocolate mixture by spoonfuls into crumbs and roll into small balls. Cover completely and freeze.

(They are easy to make, keep well and usually there aren't enough left to freeze!)

Sweet and Sour Meatballs

2 lbs ground beef
1 cup cracker crumbs
1/2 cup onion
1 egg
1 tsp salt
1/2 tsp ginger
1/3 cup milk
1 Tbsp shortening

Mix thoroughly beef, crumbs, onion, egg, salt, ginger, milk. Shape into balls. Brown in shortening in skillet. Remove meatballs and keep warm. Drain oil

Mix:
2 Tbsp cornstarch
1 can (13 oz) pineapple tidbits drained (save the juice)
1/2 cup water
3/4 cup brown sugar
1/4 - 1/3 cup vinegar
1 1/2 Tbsp soy sauce
1/3 cup chopped green pepper

Mix starch and sugar and stir in reserved pineapple juice, vinegar and soy sauce until smooth. Pour into skillet and cook over medium heat, stirring constantly until mixture thickens and boils. Boil and stir for 1 minute. Add meatballs, pineapple tidbits, and green pepper. Heat through, about 5 minutes.
