Honey Cake

1/2 c. sugar
1 c. honey
1 egg
5 T. melted shortening
2 c. flour
1 t. soda
salt
1 t. cinnamon
1 t. ginger
1 c. boiling water added last

Devil's Food Cake

1/2 c. shortening
1 1/2 c. sugar
2 eggs, well beaten
1 3/4 c. flour
1 t. salt
1 t. soda
1 c. sour milk
2 squares chocolate (melted)

Bake in 9-inch pan 40 minutes at 350°.

Applesauce Gingerbread

6 T. shortening
2/3 c. sugar
1 egg
1/2 c. molasses
1 3/4 c. flour
1 t. baking soda
1 t. cinnamon
1/2 t. ginger
1/2 t. salt
2/3 c. strained applesauce

Cream together shortening and sugar. Beat egg; add.  Add molasses; mix well. Sift together three times flour, soda, cinnamon, ginger, salt.  Add to creamed mixture alternately with applesauce.  Bake 45 minutes.

If desired, top with softened cream cheese and decorate with candied cherries and citron

Banana Walnut Cake

1 1/4 c. sugar
1/2 t. lard or butter
2 eggs
4 T. sour milk
2 c. flour
1 t. soda, sift with flour
1 c. mashed bananas
1/2 c. nuts

Bake longer than a plain cake,

Picnic Cake

Soak 1 c. dates in 1 1/2 c. hot water, cool
Add:
2 eggs
1 c. sugar
3/4 c. shortening
1 t. soda
1/2 t. salt
1 t. cinnamon
1 t. vanilla
1 1/2 C. + 2 T. flour

Mix and pour into greased and floured pan  (9x13).
Sprinkle on top???

Crumb Cake

3 c. flour
2 c. brown sugar
1 c. shortening
1/2 t. salt
1 t. soda
1 c. sour milk
2 eggs
nutmeg
cinnamon

Mix like pie crust. Reserve two cups of these crumbs for topping. Add sour milk and eggs to remainder.  A little nutmeg in batter.  A little cinnamon on top and cover with the crumbs. Bake 30 minutes.

Spice Cake

2 c. sugar
2 large T. lard
2 eggs
3 c. buttermilk or sour milk
1/2 molasses or honey
1 c. raisins
1/2 t. (each/or?) cinnamon, nutmeg, cloves, allspice
1 t. soda
1 whole sifter flour

Brown Stove Front Cake

1/4 c. cocoa
1/2 c. milk
yolk of 1 egg

Boil until thick.  Take off heat and add 1 c. sugar, 1/2 c. butter, 2/3 c. milk, 1 c. chopped nuts.
Add flavoring, 1 pinch soda and 1 t. baking powder. Make a stiff batter.

Last Minute Fruit Cake (Aunt Catherine's)

1/2 c. shortening
1 c. granulated sugar
1 egg
1 c. unsweetened applesauce
2 1/2 c. cake flour
1/2 t. nutmeg
1/2 t. allspice
1/2 t. cinnamon
1 t. salt
1 t. soda
1/4 c. water
1/4 c. walnuts
1/2 c. raisins
1 package fruit cake mix

Cream shortening, add sugar gradually and cream thoroughly. Blend well.  Add beaten egg, add the cooled applesauce. Sift flour once before measuring. Sift together flour, spices, salt and soda and add alternately with the water to the creamed mixture. Add fruit and nuts which have been mixed with the last addition of flour.

Bake 1 hour at 350°.

Penn Dutch Apple Cake (Mom's)

1/2 c. packed brown sugar
1 c. white sugar
1/2 c. soft shortening
2 eggs
2 t. grated orange rind
2 c. sifted flour
1 1/2 t. baking powder
1/2 t, baking soda
1/2 t. cinnamon
1 t. salt
1 c. undiluted evaporated milk
2 c. grated apples
1/2 c. nuts
2 t. sugar

Mix sugars, shortening, eggs, and orange rind until smooth and creamy.  Sift flour, powder, soda, cinnamon and salt together.  Add to sugar mixture, alternately with milk, beginning and ending with dry ingredients. Stir in apples.

Pour in buttered 8 x 12 pan and spread evenly over bottom of pan. Sprinkle with nuts and 2 t. sugar over top of cake batter.   Bake at 350° for about 45 minutes.

French Apple Pie

6 c. sliced apples (6 apples)
1/2 to 2/3 c. sugar
cinnamon or nutmeg, 1 t.
2 T. flour
1/2 c. butter
1/2 c. brown sugar
1 c. flour

Line a 9-inch pie pan with pastry.  Then chill while preparing apples.

Mix together the sliced apples, sugar, cinnamon and 2 T. flour. Place in chilled pastry-lined pan. (If apples are not very juicy, sprinkle a bit of water).

Cream together the butter and brown sugar.  Then with a pastry blender or fork, work in the 1 c. flour to make a crumb mixture.  Sprinkle the crumb mixture over the apples.

Bake 15 minutes in a hot oven. Then reduce temperature to a moderate oven and bake 20 to 30 minutes longer. (If pie browns too quickly, cover with a piece of paper during lat few minutes of baking.) Cool slightly before serving.

Serve with plain or whipped cream if desired.
