1/2 c. packed brown sugar
1 c. white sugar
1/2 c. soft shortening
2 eggs
2 t. grated orange rind
2 c. sifted flour
1 1/2 t. baking powder
1/2 t, baking soda
1/2 t. cinnamon
1 t. salt
1 c. undiluted evaporated milk
2 c. grated apples
1/2 c. nuts
2 t. sugar
Mix sugars, shortening, eggs, and orange rind until smooth and creamy. Sift flour, powder, soda, cinnamon and salt together. Add to sugar mixture, alternately with milk, beginning and ending with dry ingredients. Stir in apples.
Pour in buttered 8 x 12 pan and spread evenly over bottom of pan. Sprinkle with nuts and 2 t. sugar over top of cake batter. Bake at 350° for about 45 minutes.

French Apple Pie
6 c. sliced apples (6 apples)
1/2 to 2/3 c. sugar
cinnamon or nutmeg, 1 t.
2 T. flour
1/2 c. butter
1/2 c. brown sugar
1 c. flour
Line a 9-inch pie pan with pastry. Then chill while preparing apples.
Mix together the sliced apples, sugar, cinnamon and 2 T. flour. Place in chilled pastry-lined pan. (If apples are not very juicy, sprinkle a bit of water).
Cream together the butter and brown sugar. Then with a pastry blender or fork, work in the 1 c. flour to make a crumb mixture. Sprinkle the crumb mixture over the apples.
Bake 15 minutes in a hot oven. Then reduce temperature to a moderate oven and bake 20 to 30 minutes longer. (If pie browns too quickly, cover with a piece of paper during lat few minutes of baking.) Cool slightly before serving.
Serve with plain or whipped cream if desired.

Apple Raisin Bran Muffins
1 1/2 c. Raisin Bran cereal
1 c. milk
1/4 c. oil
2 eggs, lightly beaten
1 t. vanilla
1/4 c. water
2 1/2 c. whole wheat flour
3/4 c. sugar
2 1/4 t. baking powder
1/2 t. baking soda
1 t. cinnamon
1 1/2 c. shredded apple w/peel (about 2 small)
1 c. milk
1/4 c. oil
2 eggs, lightly beaten
1 t. vanilla
1/4 c. water
2 1/2 c. whole wheat flour
3/4 c. sugar
2 1/4 t. baking powder
1/2 t. baking soda
1 t. cinnamon
1 1/2 c. shredded apple w/peel (about 2 small)
Mix first 6 ingredients and let sit 10 minutes. Stir to break up. Preheat oven to 350° and grease muffin tins. Mix dry ingredients. Stir apples into cereal mixture and add to dry ingredients. Stir until moistened. Fill muffin tins 2/3 full. Bake mini muffins for 12 - 15 minutes, regular for 16 - 18 minutes. Makes 72 mini muffins or 18 regular size.

Dixie's Danish Apple Slices
Double Crust
2 1/2 c. flour
1/2 t. salt
1 c. shortening
3 egg yolk plus milk to make 2/3 c.
1 egg white - beat stiff for topping
Filling
8 - 10 cups thinly sliced and peeled apples
2 T. lemon juice
1/2 c. flour
1 1/2 c. sugar (use 2 c. for tart apples)
1 1/2 t. cinnamon
1/2 t. nutmeg
1/4 c. butter to dot on apples prior to putting on top crust
Frosting
1 c. powdered sugar
1 t. vanilla
2 T. hot water
2 1/2 c. flour
1/2 t. salt
1 c. shortening

Preheat oven to 375°. Prepare crust, divide in two--roll one thin in a bun pan, and the other half thin over parchment/wax paper in another bun pan for top crust. Prepare apples and lemon, mix all spices and stir together. Pour over bottom crust, dot with lots of butter so it won't boil over. Top with top crust. Brush whipped egg white over top. Bake for 45 minutes. When nicely browned, take out and immediately drizzle with frosting.

Apple Pudding
1 c. sugar
1/4 c. shortening
1 egg
2 large apples (shredded-2 cups)
1 c. sifted flour
1 t. soda
1 t. cinnamon
1/2 t. nutmeg
1/4 t. salt
1/2 c. nuts
Cream sugar and shortening. Add egg; beat well. Shred apples. Add to creamed mixture. Stir in dry ingredients; add nuts. Bake in 8" or 9" pan at 350° for 45 minutes.
SAUCE: Heat together 1/2 c. butter or margarine, 1 c. sugar and 1/2 c. light cream or canned milk over low heat (don't boil) until blended and sugar is melted. Add 1/2 t. vanilla and dash of nutmeg.

1 1/2 tsp salt
3 Tbsp baking powder
2 cups sugar
1/4 butter or margarine
2 cups milk
1 Tbsp vanilla
9 apples, cored and sliced
6 Tbsp margarine
3/4 cup brown sugar
1 Tbsp cinnamon
Combine flour, salt, baking powder and sugar; cut butter into mixture. Mix together eggs, milk and vanilla; combine with flour mixture, stirring until well blended. Pour batter into 2.5" x 12.75" x 23" pan. Arrange apple slices (peel side up) on top of the batter. Combine melted butter, brown sugar and cinnamon; sprinkle over top. Bake 30-35 minutes at 400 degrees.
